Origin & Heritage

  • Pallava and Chola dynasty era — only royalty were permitted to eat this rice. Commoners were forbidden by royal decree; growing locations were kept secret. Still called Forbidden Rice in China to this day

  • Store ganji in a clay pot with thin cloth cover — ferment overnight
  • Drink next morning diluted with thin buttermilk and a pinch of rock salt

Pressure Cooker Least Recommended

  • Use 1 cup rice : 2 cups water, cook 5 whistles (Adjust the water and cooking time according to your preference). Convenient but ganji is lost — you miss the probiotic and fermented rice water benefits

Payasam & Pongal

  • Strongly recommended for payasam — the cooked rice turns deep black-purple with a rich, unique aroma, similar to Aravana prasadam at Sabarimala temple. Stays fresh for months without refrigeration

Plain Rice & Rawa Dishes

  • Plain rice — slightly sticky when cooked, pairs well with curries and dal
  • Grind into rawa — use for upma, khichdi, or mix equal parts with Navara rawa for the diabetes combination

Halwa & Atukulu

  • Excellent for halwa — deep colour and rich taste
  • Can be made into atukulu (flattened rice) using the traditional process
